We had 23 Ketonians attend the December 1, 2018 meetup held at the North Regional Library in Minneapolis, MN. There were a few new faces as well as several returning friends.

We had small talk for a few minutes while people gathered.

We each introduced ourselves and answered the question: What is a recent keto success?

Venue: It will likely be the Stillwater Yacht Club.
Possible Dates: April 20 or May 11
Still hoping for Maria Emmerich as main presenter.
Will need lots of volunteers to help.
Claudia has connections at Food Co-ops that may help.
Annette Bosworth would be another excellent option as either a second or future speaker.
After the Holidays we will have additional regular conference calls to help with coordination.
Ro and John will try to meet with Maria to finalize her role.
Recipe
Ro shared Green Capsicum (Bell Pepper) Sambar. This is an Indian dish she modified to be Keto and served over cauliflower rice. It was quite tasty.
