We had about 35-40 Ketonians attend the Second Keto Picnic on September 7, 2019.
Everyone brought there own meat to grill and some dishes to share. There were a ton of great options including once again Brian’s smoked Brisket (absolutely one of the best briskets I’ve ever tasted).
Here are a few of the recipes I’ve captured. Let me know if you have any additions/corrections:

Modifications
Added Coconut milk at the end.
Substituted broth for water and accidentally added water anyway (so not as thick)
Added spices like turmeric, garlic and onion powers.
Keto skewer (Brian)
Broccoli dish (Amy)-
I don’t really have a recipe. It’s broccoli, red onion, bacon and sunflower seeds. The dressing is mayonnaise, a splash of lemon juice, and salt and pepper to taste
Bacon and Egg Salad (Kim)
Keep in mind this makes a huge bowl that is perfect for a big group. I used a box of 32 organic Costco eggs and cut them up. I then added the two packages of cut up cooked bacon and mixed everything together. For the mayo I used 1 egg, 1/2 tsp of mustard, 1 tsp of pink Himalayan salt, and 1cup of bacon grease. I put the mayo ingredients into a wide mouth mason jar by the order listed . I then used an immersion blender on high speed and put it at the bottom of the jar for about 20 seconds until it was all blended I poured that over the bacon and egg mixture and added 2 tbsp of Pork Barrell BBQ All American Seasoning & Rub from Costco and mixed everything together.
Chocolate Cake (Jamie)
My mods: I doubled the recipe, used heavy whipping cream instead of coconut milk, used all dark (no white) chocolate chips (mostly Lily's chips and Chatwell's 70% cacao chips which are nut-, dairy-, and soy-free). I don't think I put the full amount of chips on top, either, just used what I had left of the Lily's. Squirted a few drops of stevia glycerite in the batter as well since normally the sweetness would come from the white chocolate chips. Next time I may add no sugar sunbutter for a 'Reese's Cake'!
